Handling Orders For Daily Walk-Ins

Managing steady meal crowds in Idgah Colony requires disciplined station prep rather than rushed heating. Kitchen shifts coordinate bulk ingredient processing so gravies, breads, and side orders move out hot without delays.

• Vegetable chopping and base gravies handled in morning shifts
• Tandoor and tava sections fired continuously for meal rushes
• Packing station separated to prevent dine-in ticket mix-ups

Keeping Portions Consistent

Standard ladles keep every plate identical. Because orders peak hard during lunch and late evening, kitchen hands work strictly off ticket prints to avoid missed side accompaniments during packed hours. Clean counter turnovers matter just as much as cooking speed.
